A seasonal twist on everybody's favorite. Pile on the veggies!

Squash Pizza
Ingredients:
pizza dough or pizza crust
Sauce:
1 delicata squash
Cooking oil
1 hot pepper, finely diced
1 Tbsp. tamarind concentrate
1-2 tsp. vegetable better than bouillon
1 tsp. green curry paste
Toppings:
Broccoli, chopped
Red pepper, sliced or diced
Mushrooms, sliced
White cheddar cheese (alpine cheddar), shredded or sliced and crumbled
Directions:
Preheat oven to 450F. Cut squash in half lengthwise. Scoop out seeds. Rub squash interior with cooking oil. Place squash face down on a pan. Pierce the exterior a few times with a knife or fork. Roast until soft all the way through - about 30 minutes.
Scoop out squash and mash. Stir mash together with hot pepper, tamarind concentrate, bouillon, and green curry paste. Set aside.
Steam broccoli until just beginning to soften.
Roll out pizza dough or get prepared crust.
Spread squash sauce evenly over dough/crust.
Sprinkle on toppings at desired concentrations.
Bake at 450F for about 20-25 minutes (follow other dough or crust directions as necessary).
I love how this pizza turned out. The combination of the creamy squash, broccoli, and melted cheese reminds me of the taste of fried broccoli cheddar bites but with even more flavor.
